1 ½ cups Basmati rice
1 ½ cups coconut milk
1 ½ cups water
¼ cup unsweetened shredded coconut
1 teaspoon salt
¼ teaspoon ground cardamom, optional
1) Combine all ingredients in a medium pot; bring to a boil over high heat.
2) Reduce to a gentle simmer and cook, covered, until liquid has been absorbed, about 20 minutes. Fluff rice with a fork, remove from heat, and let sit covered 5 minutes. Serve warm.
