Spicy, savory, and smoky, this Cajun dish is perfect served alongside greens, a salad, or a cup of bean soup.
Ingredients:
1 tablespoon olive oil
1 pound lean ground beef
½ cup diced green bell pepper
½ cup diced celery
1/3 cup finely chopped green onion
4 cups cooked long grain rice
¼ cup water
1 teaspoon Creole or Cajun seasoning
½ teaspoon garlic powder
½ teaspoon cayenne pepper
Directions:
1) Heat oil in a large skillet over medium. Add beef and cook until browned, stirring to break up, about 5 minutes. Add bell pepper, celery, and green onion; cook until softened, stirring occasionally, about 5 minutes. Drain excess grease from skillet.
2) Add remaining ingredients to skillet; stir well to mix. Cover and cook over low until beef is tender and liquid is absorbed, about 15 minutes. Serve warm.
