Bring the breakfast joint to your kitchen with this hearty, family-friendly rice casserole.
4 cups cooked white rice
2 cups shredded Cheddar cheese, divided
12 slices bacon, cooked, crumbled, divided
1 (15-ounce) can tomato sauce
½ cup prepared chili sauce
1 green bell pepper, thinly sliced crosswise into 12 rings
1) Preheat oven to 350°F. Lightly grease a 13-by-9-inch baking dish.
2) Combine rice, 1 ½ cup of cheese, ½ cup of crumbled bacon, tomato sauce, and chili sauce in a large bowl; mix well. Transfer mixture to prepared baking dish; pat down firmly with hands. Make 12 wells in the rice mixture, about 2-inches wide each, using the back of a spoon. Cover and bake 25 minutes.
3) Remove dish from oven; break an egg into each well in the rice mixture. Place a prepared bell pepper ring around each egg well. Top with remaining cheese and bacon. Bake an additional 15 to 20 minutes, until eggs are set. Serve hot.
