This gently spiced rice has lots of flavor but not too much heat. Serve it with broiled and grilled meats, kebabs, and roasted vegetables.
Ingredients:
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, chopped
3 tablespoons curry powder
1 tablespoon sugar
1 teaspoon salt
2 cups long-grain white rice
½ cup golden raisins
3 ½ cups water
½ cup chopped fresh cilantro, for garnish
Directions:
1) Heat oil in a medium saucepan over medium. Add onion and cook until translucent, about 4 minutes, stirring occasionally. Add garlic, curry, sugar, and salt; cook until fragrant, stirring, about 2 minutes.
2) Add rice and raisins to saucepan; cook until lightly toasted, about 2 minutes, stirring. Add water; bring to a boil over high heat. Reduce to a simmer and cook, covered, until liquid is absorbed, about 20 minutes. Serve warm and garnish with cilantro.
