Spiced Rice Pudding recipe

Rice makes for a surprisingly delicious dessert—it cooks into thick, creamy porridge with lots of milk and spices to complete the deal.

Ingredients:

3 cups whole milk
1 (15-ounce) coconut milk
1 cup medium-grain white rice
½ cup sugar
1 teaspoon ground cinnamon
½ teaspoon ground cardamom
½ teaspoon ground ginger
½ teaspoon salt
¼ teaspoon ground allspice

Directions:

1) Combine all ingredients in a medium saucepan; bring to a boil over high heat. Reduce to a simmer; cook uncovered until liquid is absorbed and rice is creamy, stirring occasionally, about 60 minutes. Serve warm.
