Dirty Rice recipe

Dirty rice is a classic Cajun dish made with spicy sausage and lots of vegetables. It’s a hearty dish that can be served on hot summer days to bring down the heat.

Ingredients:

4 cups water
2 ½ cups long-grain white rice
1 teaspoon salt
2 tablespoons olive oil
1 pound spicy sausage, cut into ½-inch slices
1 yellow onion, diced
1 red bell pepper, seeded, diced
1 green bell pepper, seeded, diced
2 stalks celery, diced
3 cloves garlic, minced
½ teaspoon cayenne
¼ cup minced scallions, for garnish

Directions:

1) Combine water, rice, and salt in a medium saucepan; bring to a boil over high heat. Reduce to a simmer, cover, and cook until liquid is absorbed, about 20 minutes.

2) Meanwhile, heat oil in a large skillet over medium. Add sausage and cook until no longer pink, stirring occasionally, about 5 to 8 minutes. Remove from heat with a slotted spoon; set aside.

3) Add onion, bell peppers, and celery to skillet; cook until softened and lightly browned, stirring, about 6 minutes. Add garlic and cayenne; cook until fragrant, stirring, about 2 minutes.

4) Add reserved sausage to skillet; stir to mix and cover. Cook 5 minutes over low heat.

5) Combine reserved rice and sausage mixture in a large bowl; toss well to coat. Spoon into serving bowls and garnish with scallions.
