Almond Fried Rice recipe

This colorful, crunchy fried rice is easy to whip up after a hard days’ work.

Ingredients:

2 tablespoons vegetable oil
½ cup diced red bell pepper
1 cup sliced green onions
1 cup diced cooked ham
2 eggs, lightly beaten
3 cups cooked rice, cold
2 tablespoons soy sauce
½ cup slivered almonds, toasted

Directions:

1) Heat oil in a wok over medium-high. Add bell pepper; cook 1 minute, stirring. Add green onions; cook 1 minute, stirring. Add ham; cook 1 minute, stirring.

2) Add egg to wok; stir slowly to scramble egg as it cooks, about 2 minutes.

3) Add rice and soy sauce to wok; cook until rice is golden, about 2 minutes, stirring.
